Outer Banks Recipe: Blackened Grouper with Rice and Summer Vegetables


Looking for a great summer meal? A local Outer Banks chef shared this recipe for using locally caught  grouper with Jasmine rice and a blend of sauteed zucchini, squash and onions. The fish is blackened seared over high direct heat which goes great with the fresh taste of summer vegetables.

The mix of summer vegetables was sauteed with a little olive oil, salt, pepper, and garlic. For increased flavor you can deglaze the pan with some white wine. The vegetables are done when they are soft. Jasmine rice can be cooked according to the package directions.
The key to preparing the grouper correctly is a hot grill and homemade blackening seasoning.  The spice of the blackening seasoning pairs well with the sweetness of the grouper.    You can prepare your own blackening with the recipe below.

Outer Banks Blackening:

  • Paprika
  • Onion Powder
  • Red Pepper Flakes
  • Onion Powder
  • Cayenne Pepper
  • Oregano 
  • Basil
  • Thyme
  • Black Pepper
  • Salt
The proportions of each ingredient can be adjusted to allow for individual taste. A teaspoon of each makes for a mild blackening. Increase the paprika, red pepper, cayenne pepper to make a spicier blackening.
