Outer Banks Chef Recipe: Broccoli Baked Potato and Bacon Soup

Here is a great soup on a cold, rainy day whether at home or on the Outer Banks. A clear broth makes for a light yet filling lunch. Homemade Soup is always one of our favorite ways to ward off a chilly rainy day.
Ingredients:
Chicken Stock
Broccoli
Baked Potatoes
Carrots
Onions
Bacon
First you start by sautéing the onions and carrots until the onions become translucent.  Next add the broccoli, baked potatoes, and chicken stock.
While the soup is coming to a boil, cut the bacon into small pieces.  In a separate pan you are going to sauté the bacon until crisp.  Remove the fat from the bacon and add bacon pieces to the soup.
Let cook for 10 minutes then ready to serve.
